OYSTER CONSERVATION
Would you like to know a little more about oyster conservation? At first, it is wise to keep them flat, as they are originally packaged in their hamper. In this way, the oysters will not lose their water. Yes, but where to place them to preserve their freshness? Simply in your cellar or garage, at a temperature between 10 and 15 degrees. If you do not have a room at this temperature, you can keep them in the fridge in the bottom bin.
Be careful not to subject them to heat shock as oysters are very sensitive! If you decide to cool your oysters to a temperature of 10 degrees, be sure to leave the basket in its cool box.
Under optimal conditions, the oyster conservation time will be maximum 10 days. But be careful, this duration can vary according to the seasons (an oyster in shoot is more fragile out of the water). To keep oysters in the best possible conditions, we recommend placing a weight on them. In this way, they will avoid opening and losing their water! You can then store the oysters outside or in the vegetable compartment of your refrigerator, between 5 ° and 15 ° C, for a maximum period of 10 days. Then you have to take into account the "top flavor": this is the optimal time to enjoy your oysters. The ideal is to serve them between 3 and 9 days after the date of packing.
